Aria di Festa - International Ham Fair TBA The prosciutto of San Daniele is made by more than 25 different prosciuttifici, experts in the salting and curing process that takes from a year to 18 months to complete. The sweet, melt-in-the-mouth ham is then sliced wafer-thin and used in a variety of recipes. It is extremely tasty on its own, as well. The Aria di Festa is the most important ham festival in Italy, where the secrets of the prosciuttifici are revealed. Nearly 15 per cent of all the prosciutto consumed in Italy comes from San Daniele.
